Aachi Rava Dosa Mix

Ingredients

  • 550 ml water
  • 200 g batter mix
  • 1 g habanero flakes
  • 1 tbsp canola oil (optional)
  • diced chili peppers (optional)

Directions

  1. Mix or whisk all ingredients together in a large bowl and let sit for at least 10 mins to allow the batter to rehydrate and thicken.
  2. Preheat hot plate on med-high flame (7 on normal burner).
  3. Spray hot plate with Pam. Fill ladle about 3/4 full and pour out batter in a circular pattern. Cook for about 3 mins. Spray top of dosa with Pam and flip. Cook for another 3 mins.

Notes

  • If using an immersion blender remove the black peppercorns from the mix, otherwise black peppercorn will be the overriding flavor.
  • The batter will separate very quickly. Mix before filling the ladle and then pour the batter out quickly.

  • 2015.12.12:
    • Used 2 tbsp of canola oil, a bit too much. 1 g of habanero flakes is the limit for Ronda, has building but manageable heat. Didn't have any diced chili peppers.
