Broiled Eggplant Parm
Ingredients
- Eggplant, cut into 1/4" slices
- Mayonnaise
- 1/2 cup Parmigiano Reggiano, grated
Directions
- Preheat the broiler.
- Spread mayonnaise sparingly on both sides of each eggplant slice,
then dip the slices int he grated Parmesan, throughly coating both
sides.
- Arrange the slices in a single layer on a lightly oiled baking sheet.
Place under the broiler until golden brown, about 3 minute. Flip the
slices and broil again until golden brown, crunchy on top, and the
eggplant is soft, about 3 more minutes.
