Broiled Eggplant Parm

Ingredients

  • Eggplant, cut into 1/4" slices
  • Mayonnaise
  • 1/2 cup Parmigiano Reggiano, grated

Directions

  1. Preheat the broiler.
  2. Spread mayonnaise sparingly on both sides of each eggplant slice, then dip the slices int he grated Parmesan, throughly coating both sides.
  3. Arrange the slices in a single layer on a lightly oiled baking sheet. Place under the broiler until golden brown, about 3 minute. Flip the slices and broil again until golden brown, crunchy on top, and the eggplant is soft, about 3 more minutes.
