- 1 cup mix weighs 100g
- preparation is 1 cup mix (100g) to 3/4 cup water (180g)
- 75% hydration by volume (water to mix)
- 180% hydration by weight (water to mix)
- To convert sodium to salt:
<units of sodium> * 2.5 = <units of salt>
- To convert salt to sodium
<units of salt> / 2.5 = <units of sodium>
- mostly interchangeable: skirt steak, flank steak, hanger steak
- flavor: skirt steak > flank steak > hanger steak
- Rehydrate dried coconut combining 2 parts coconut and 1 part warm
water (by volume) or equal parts by weight. Mix the coconut and
water, compact the coconut down, cover, and let set for 10 mins.
Drain any excess water.
