Roasted Cherry Tomatoes

Ingredients

  • 24 oz cherry tomatoes

  • olive oil

  • salt & pepper

Directions

  1. Preheat oven to 350 F.

  2. Halve cherry tomatoes and toss with salt and pepper.

  3. Arrange tomato halves in roasting tray, in a single layer, skin side down.

  4. Roast for ~30 minutes (or till done).

Notes

  • 24 oz of halved cherry tomatoes fills a 11" x 13" Breville Oven roasting tray.

History

  • Roasting at 390 F super-convection blackened the tops of the tomatoes before evaporating enough liquid.
