Sushi Vinegar

Ingredients

  • 1 cup rice vinegar

  • 1/3 cup sugar

  • 3 tsp salt

Directions

  1. Combine ingredients. Mix until sugar and salt are dissolved.

  2. Gently fold into rice immediately after it finishes cooking. Use 5:1 ratio of (uncooked) rice to sushi vinegar.

Notes

  • Do not mix in metal pot.
