Vinaigrette Salad Dressing

Ingredients

  • 4 oz Olive Oil

  • 2 oz Good Balsamic

  • 1 tsp Lemon Juice

  • 2 tsp Mustard

  • Salt and Pepper (Finely Ground)

Directions

  1. Mix all ingredients together. Optionally mix with an immersion blender.

  2. Store in (and dispense from) a plastic condiment squeeze bottle.

Notes

  • Makes about 6 oz of dressing.

  • Mustard is a surfactant which binds the oil an vinegar together, alternative surfactants that could be used are: mustard, mayo, honey, egg-whites

  • If stored in (and dispensed from) a plastic condiment squeeze bottles, the pepper must be finely ground otherwise it can plug up the dispenser nozzle.

  • General ratios:

    • two or three parts oil to one part vinegar.

    • 1 tsp surfactant per tablespoon of vinegar
