Black Beans
Ingredients
pressure cook
1 pound dried black beans, picked over and rinsed
4 cups low-sodium chicken stock or water
2 tsp kosher salt (10g)
1 yellow onion, halved
8 cloves garlic
1 juicing orange, rinsed and sliced in half
Directions
Place beans, stock/water, salt, onion, and garlic. Squeeze in orange juice and then add the squeezed orange halves. Cooker on high for 23 minutes with a natural release.
Remove orange and onion halves. Simmer, stirring frequently, until reduced to a thick, creamy sauce that clings to the beans, about 10 minutes.
