Black Beans

Ingredients

  • pressure cook
    • 1 pound dried black beans, picked over and rinsed
    • 4 cups low-sodium chicken stock or water
    • 2 tsp kosher salt (10g)
    • 1 yellow onion, halved
    • 8 cloves garlic
    • 1 juicing orange, rinsed and sliced in half

Directions

  1. Place beans, stock/water, salt, onion, and garlic. Squeeze in orange juice and then add the squeezed orange halves. Cooker on high for 23 minutes with a natural release.
  2. Remove orange and onion halves. Simmer, stirring frequently, until reduced to a thick, creamy sauce that clings to the beans, about 10 minutes.
