Black Beans
Ingredients
- pressure cook
- 1 pound dried black beans, picked over and rinsed
- 4 cups low-sodium chicken stock or water
- 2 tsp kosher salt (10g)
- 1 yellow onion, halved
- 8 cloves garlic
- 1 juicing orange, rinsed and sliced in half
Directions
- Place beans, stock/water, salt, onion, and garlic. Squeeze in orange
juice and then add the squeezed orange halves. Cooker on high for 23
minutes with a natural release.
- Remove orange and onion halves. Simmer, stirring frequently, until
reduced to a thick, creamy sauce that clings to the beans, about 10
minutes.
